Danny Goodman's AppleScript Handbook, originally one of the first AppleScript books, has always been a highly recommended and utilized book throughout the AppleScript community.  Now, updated for Mac OS X, this book provides all of the information needed to get started with AppleScript.  It's a great book for beginners, and a good refresher for existing scripters.

The PDF e-book is searchable - very convenient when you forget the usage of terms. I found it very useful as well to print out the Appendices to use for a quick reference to definitions.
